    This position is based at our Norfolk Scope Arena. Built in 1971, architect Pier Luigi Nervi designed Scope Arena and to this day the venue remains the world’s largest reinforced thin-shell concrete dome. The venue’s concrete monolithic dome and twenty-four flying buttresses make it a popular, eye-catching and iconic landmark in downtown Norfolk. Scope Arena is the host to a wide variety of events and is currently home to the Norfolk Admirals hockey team, the MEAC Basketball Tournament, conventions, concerts, family shows and much more!     The Concessions Manager is responsible for the effective management of venue concessions operations including inventory controls, product ordering, training new employees, cash controls, compliance with alcohol service polices, cleaning, safety, guest service, employee/volunteer training and supervision, warehouse oversight, troubleshooting, closing duties, event planning support, food preparation and production, and any other tasks assigned by the DFB.  The Concessions Manager must be provide a high level of event oversight, technical proficiency and operational/personnel support to ensure the smooth operation of the Arena & Concessions Dept. 

     

    The Concessions Manager will actively supervise, coach, counsel, direct, train and mentor employees in meeting company quality standards, and will may initiate or recommend employment actions such as hiring, termination, suspension, discipline, promotion and transfer.  The CM will provide oversight and resolution responsibility for employee performance issues.  Actively and independently manage all aspects of employee relations to ensure a positive, harmonious, compliant and cooperative work environment. 

     

    This is a key position for the effective and profitable operation of the business including large volume sales and large volume ordering. The employee must maintain excellent attendance and be available to work a variable event-driven schedule including evenings and weekends.  Flexible availability, professional presentation, outstanding interpersonal skills, self-direction and strong technical (computer and POS) aptitude are required.

    Responsibilities

    • Assists in the overall effective management of the Food & Beverage operations by ensuring proper set-up of all concession locations prior to doors. Set-up duties may include (but are not limited to): verifying opening inventory, assigning duties to concession workers (employee/volunteer), ensuring sanitation standards are met, verifying that each location is fully operational, ascertaining levels of food production based upon projected guest attendance has been met; assuring staff has followed proper procedures for distribution and handling of cash.
    • Assist in the management of handling all communication with hourly staff & guests.
    • Ensure event staff and volunteers are aware of work place expectations; provide on-going assistance, training and mentoring to event staff and volunteers; promote a positive, enthusiastic and cooperative workplace environment by working side-by-side with staff and volunteers; reinforce procedures and practices through repetition; lead by example and provide on-going constructive feedback.
    • Provide a high level of oversight and operational expertise resulting in the smooth, efficient and profitable execution of events.
    • Manage and run all venue concessions operations before, during and after the event. Duties include staff scheduling, employee check-in, equipment inspection, POS monitoring and troubleshooting, vault duties, guest complaint resolution, training, food production, clean-up, post-event reconciliation and reporting, and any other duties as assigned by the GM.
    • Willing to cover any open position to assure location is fully operational and company standards pertaining to speed of service and guest satisfaction are met; assist with Catering Service operations and event needs, as directed by the GM.
    • Ensures total compliance with all alcohol service policies. Monitors alcohol service throughout event to assure 100% compliance with Alcohol Service policies.  Reports any alcohol service or compliance issues to Spectra management immediately.
    • Complete post-event evaluations, data compilation, tracking of monetary and product shortages, generating reports; serves as a resource for POS applications, training, and hardware problems
    • Author, review and amend policies & procedures, as requested by the General Manager.
    • Oversee scheduling and labor allocation for all areas of the Food & Beverage operations directed by the General Manager.
    • Work in tandem with the General Manager to analyze ticket sales in relation to anticipating staffing needs, target market demographics; determine and project point-of sale to guest ratio.
    • Evaluate recent historical sales and purchasing data for the purpose of identifying purchasing patterns and accurate cost of goods.
    • Program and maintain the point of sale system to ensure accurate financial reporting, tracking of accountability, and commodity levels by location.
    • Directs and assists Supervisors in preparing and attaining future goals.
    • Provides each employee with the proper direction and follows up on all assignments.
    • Inspects the operation on a regular basis to ensure that the established quality standards are maintained.
    • Gives the employees clear direction and provides the necessary assistance for them to provide them to perform their work.
    • Assists the General Manager in evaluating each employees’ performance and makes recommendations for their improvement.
    • Reviews and assists in the development of menus and marketing plans with the appropriate department heads.
    • Establishes and maintains personal relationships with show managers, suppliers, vendors and the public that projects the venue in a positive light.
    • Ensure legal, efficient, professional and profitable operation of the venue.
    • Review with the GM, financial reports, including budgets, projections, forecasting, revenue analysis, disbursements, capital investments, labor and product costs, wage and salary control, P&L financial statements to further grow Spectra profitability.
    • Any additional task and/or responsibly that is given by the General Manager that is required to ensure to further grow the business & client relationship.

    Qualifications

    • MA or MS; BA or BS with business-related major; accounting minor or credits preferred.
    • Minimum 2 years management experience in food-related or concessions industry.
    • Concessions Manager Certificate from the National Association of Concessionaires.
    • Nationally recognized, advanced food service sanitation training course certification.

    Knowledge, Skills and Abilities:

    • Ability to communicate with employees, co-workers, volunteers, management staff and guests in a clear, professional and courteous manner which fosters a positive, enthusiastic and cooperative work environment.
    • Ability to make sound business/operations decisions quickly and under pressure.
    • Ability to speak, read and write in English.
    • Solid working knowledge of computer applications: Microsoft office, POS systems, timekeeping systems.
    • Ability to work well in a team-oriented, fast-paced, event-driven environment.
    • Possess a thorough working knowledge of all existing concessions and premium services locations: geographical location, equipment, evacuation procedures, adjacent employee and guest areas, and facility access.
    • Possess valid Food Handlers certificate and Alcohol Service Permit if required by state or local government.
    • Familiar with inventory cost control and menu planning.
    • Possess thorough working knowledge of all applicable sanitation requirements, food preparation guidelines, alcohol service policies, safety standards, etc. pertaining to Ovations and venue concession and premium services operations.
    • Ability to calculate basic and complex math functions (addition, subtraction, multiplication, division, percentages).
    • Ability to handle cash accurately and responsibly.
    • Ability to consistently adhere to the highest standards of integrity, professionalism, ethics and confidentiality.
    • Ability to work independently with little direction.

    Physical Dimensions:

    Performing the duties of this position involves extensive and continuous standing and walking. Routine activities require the employee to be able to reach with hands and arms, sit, walk, stoop, kneel, crouch and crawl.  The employee is frequently required to lift up to 50 pounds.  The vision requirements include the ability to adjust focus, peripheral vision and close vision.
