    The Director of Food & Beverage is responsible for overseeing the direction of the kitchen’s daily activities in accordance with Spectra policies and objectives to ensure guest satisfaction, profitability and positive, productive and compliant work environment. The Director of Food & Beverage is solely responsible for the effective management and operation of the culinary team including event planning support, scheduling, food preparation and production, food cost control, compliance with food safety and sanitation policies, cleaning, kitchen safety, employee training and supervision. The Director of Food & Beverage must provide a high level of oversight, culinary proficiency and operational/personnel support to ensure the smooth running of all food outlets and events.

    The Director of Food and Beverage will be responsible for:

    • Providing product and services support to all direct reports within the Food & Beverage Department under the company vision and the goal planning established by the Director of Food & Beverage
    • Establishing and ensuring completion of operational priorities by way of oversight of outlet managers planning and execution of plans to meet the Director of Food & Beverage's goals

    • Monitoring and adjusting the planning to maintain all key performance indicators at established levels

    • Identifying and assisting in resolution of operational deficiencies, deviations and variances to standards

    • Supporting all food and beverage profit and operational improvement

    • Assisting with menu engineering, procurement efficiencies, sales enhancements, productivity improvement and re-conception

    • Managing the food and beverage functions to meet daily needs of the operations

    • The operations of the various food and beverage departments such as room service, restaurant outlets, bars and banquets

    • Ensuring department managers are developing and implementing schedules for the operation of all restaurants and bars to achieve a profitable result

    • Implementing effective controls for food, beverage and labor costs among all departments

    • Continuously evaluating the performance and encouraging improvement of the personnel in the food and beverage department. Administering a training and development program within the department which will provide well trained employees at all levels and permit advancement for those persons qualified and interested in career development

    • Ensuring that Quality Standards and service are maintained for Property, Product and People

    • Providing assistance and instruction to employees and making routine hiring decisionsReviewing weekly, monthly and quarterly financial statements with department managers and DirectorCommunicating daily with other management, and department heads and employees to ensure proper operating procedures are in complianc


    • BA or BS with culinary major, business or related field
    • Minimum 5 years management experience in restaurants, casinos, resorts, etc., preferably in a high volume multi-unit environment
    • Nationally recognized, advanced food service sanitation training course certification
    • Stratton Warren knowledge, a plus
    • All employees must obtain a valid gaming license from the State Gaming Agency and Tribal Gaming Office prior to beginning work and are required to have license renewed annually
    • Must have excellent people management skills, the ability to manage multiple locations onsite
    • Exceptional attention to detail and organizational skills
    • Ability to communicate with employees, co-workers, volunteers, management staff and guests in a clear, business-like and respectful manner which focuses on generating a positive, enthusiastic and cooperative work environment
    • Ability to speak, read and write in English
    • Ability to work well in a team-oriented, fast-paced, event-driven environment
    • Possess valid food handling certificate and alcohol service permit if required by state and federal regulations
    • Ability and full understanding to calculate advanced math functions dealing with P&L statements, financial statements and POS cash/credit transactions, cash reconciliation and product inventory
    • Ability to handle cash accurately and responsibly
