    The Executive Steward will be accountable for the direction of the stewarding team and dish machine operators (DMO).  Oversees back of the house kitchen cleaning and sanitation of busy restaurants; banquet set-up/break-down; maintain inventory and pars for kitchen and banquet equipment of food under the direction of the Executive Chef.

    Responsibilities

    • Oversees the stewarding team and ensures all duties and tasks are completed as assigned.
    • Follows all Safety Data Sheet (SDS) criteria, food and product safety, and Food and Beverage Policies and Procedures.
    • Ensures that team maintains loading and receiving areas in safe and clean condition.
    • Ensures that team cleans and sanitizes all food service areas and equipment.
    • Maintains excellent attendance and be available to work events and varied schedules per business need.
    • Reviews with Executive Chef all scheduling of stewarding/DMO team members. 
    • Assists Chef in all aspects of hiring, training, and mentoring team.  
    • Ensures highest sanitation levels for all items previously used so that they may be used again in clean condition, free of any contamination risk.
    • Maintains safe & proper food storage and rotation.
    • Implements rotation and cleaning schedule.
    • Complies with Spectra Food Service & Hospitality standards, policies, procedures, and health and safety regulations, including OSHA. 
    • Requisition of equipment and organization for plate-up, tray out and clean-up for banquet functions.
    • Maintains inventory & pars for F&B equipment, china, glass & silver following all functions and monthly food inventory.
    • Ensures areas of responsibility are clean, safe and free from any physical hazards.  Follows all Environmental Health Codes, Local, State and Federal Guidelines.

    Qualifications

    • High School diploma or equivalent. Background in Food & Beverage management preferred.
    • Valid driver’s license with a safe driving record.
    • Must possess basic computer skills including MS Word and MS Excel.
    • Ability to clearly communicate, read and write in English.
    • Must acquire and maintain a valid Food Handlers Card, Blood-Borne Pathogens (BBP) and other required compliance trainings.  
    • Must pass Spectra background requirements. 

     

    Knowledge, Skills and Abilities:

    • Knowledge of dishwasher operation and chemicals used in cleaning and maintenance of equipment and areas of purview.
    • Ability to recognize operational needs and analyze and facilitate the changes required in a fast paced, high volume environment.
    • Must be willing to work a flexible schedule based on the demands of the business.
    • Up to date knowledge of SDS criteria procedures,  Blood Borne Pathogen remediation, Safety Guidelines, First Aid/C.P.R., Health Codes, Local, State and Federal Guidelines.
