    Food & Beverage Manager is responsible for overseeing the execution\service of all catered & concessions events. The Food & Beverage Manager must be personable and able to work in an ever- changing fast-paced environment.  The Food & Beverage Manager will be responsible for training and developing all service staff.  

     

    The Food & Beverage Manager must maintain excellent attendance and be available to work events per business need.

     

    This position is based at our Macon Centreplex. The Macon Centreplex is a multi-purpose arena and in Macon, Georgia. It was home to the Macon Whoopee (ECHL), Macon Whoopee (CHL) and Macon Trax ice hockey teams and also the Macon Knights arena football team until 2006. It is home to the Macon Mayhem, a minor-league hockey team in the Southern Professional Hockey League. This venue seats up to 7,182 for hockey and arena football and up to 9,252 for concerts.     Responsibilities

    • Overall Management of Catering and Concessions Food and Beverage operations including: scheduling, ordering, inventory, labor costs and equipment maintenance.
    • Train, motivate and evaluate staff and provide or coordinate staff training.
    • Schedule staff and coordinate volunteers for events.
    • Exercise direct supervision to all front-line and warehouse staff.
    • Manage and run all F&B operations before/ set up, during and after/ break down of events.
    • Responsible for overseeing serving beverages to guests including alcoholic beverages, and compliance with alcohol police as well as taking action when guests are visibly intoxicated.
    • Responsible for overseeing the serving of meals to guests or directing guests to the buffet line.
    • Responsible for observing guests to respond to any additional requests, answering complaints and monitoring guest service.
    • Responsible for completion and updating of administrative paperwork associated with events, i.e. POS, menu boards, cash handling, schedules, diagrams, timelines and side-work assignments.
    • Cash handling responsibilities include verifying POS is correct for events, cash banks, cash and event sheets, event deposits and vault verifications.
    • Assists in setting up banquet functions including dishware, glassware and silverware.
    • Maintains sanitation, health and safety standards in work areas.
    • Must show demonstrated ability to meet the company standard for excellent attendance.
    • Monitor the function, maintenance and cleanliness of F&B equipment.
    • Leads F&B team with projects including training, inventory and special events.
    • Enforces all Spectra and venue policies and procedures are adhered to.
    • Practices excellent Human Resources skills regarding employee relations, corrective action, coaching and counseling employees and completes all necessary HR related paperwork.

     

    Qualifications

    • Ability to work a flexible schedule including days, nights weekends, extended (long) work days and extended number of days.
    • Minimum of 2-3 years food and beverage management experience in high-volume operation.
    • High school diploma or equivalent GED.
    • Associate’s degree (A.A.) or equivalent from two-year College in Business Management or Hospitality preferred but will consider relevant work experience.
    • Maintain current certification in a state recognized Food Handlers and sanitation program, and alcohol service permit if required by state or local government.
    • Experience working in a management capacity in a high volume fast-paced restaurant or catering environment.

     

    KNOWLEDGE, SKILLS AND ABILITIES:

    • Basic computer proficiency and Microsoft products knowledge, to include: Excel, Word and Outlook.
    • Technical proficiency and experience demonstrating verifiable knowledge of food preparation methods.
    • Ability to develop results oriented staff through effective training, evaluation, motivation, coaching and counseling.
    • Ability to positively distribute responsibility to others to meet objectives and achieve desired results.
    • Ability to recognize problems and to creatively and expeditiously find solutions.
    • Must be self- directed.
    • Must be able to supervise, coach, schedule and train employees.
    • Excellent customer service skills.
    • Must be sure that all details of the job are performed and their work is accurate.
    • Must be constantly aware of changing events, such as staff or supply shortages.
    • Ability to handle cash accurately and responsibly.
    • Identify problems and review information.
    • Knowledge of the rules and uses of numbers in mathematics. Areas of knowledge include arithmetic and algebra.
