The Restaurant Manager provides oversight to all levels of restaurant(s) to ensure its profitable operation, optimum guest satisfaction and return visits.


This position is based at our Gran Via Buffet. Regardless of what type of culinary mood you’re in, there’s a dish for it at the all-you-can-eat Gran Via Buffet at WinStar World Casino and Resort. This 500-seat buffet restaurant, just steps from the Madrid and London Gaming Plazas, allows you to be the curator of your own meal.   • Responsible for all aspects of the effective management of restaurant operation within a casino environment.
  • Achieve operational objectives by contributing information and recommendations to strategic plans. Prepare and complete action plans; implement production, productivity, quality, and guest-service standards; resolve problems; identify trends; determine system improvements and implement positive change.
  • Enhance department and overall business reputation by accepting ownership for accomplishing new and different requests; explore opportunities to add value to accomplishments.
  • Foster teamwork. Lead, direct, mentor and guide unit managers and supervisors. 
  • Actively coach, counsel, direct, train and mentor team in meeting company standards.
  • Oversee all aspects of employee relations to ensure a positive, harmonious, compliant and cooperative work environment.
  • Maintains ambiance by controlling lighting, background music, linen service, glassware, dinnerware, and utensil quality and placement; monitoring food presentation and service.
  • Ensure total compliance with all alcohol service policies. Will effectively and compliantly address all alcohol service or compliance issues immediately.
  • Maximize profitability by ensuring portion control.
  • Monitor food handling, cash handling and work safety compliance. Monitors product quality to ensure high level of guest service.
  • Ensure Point of Sale Systems (POS) are in working order. Audit for accuracy of Payment Card (PCI) compliance, charges and cash handling  
  • Protect branded concepts through audits and compliance processes.


  • BA or BS with culinary major, or degree from nationally recognized culinary school.
  • Minimum 5 years management experience in restaurant operation.
  • Nationally recognized, advanced food service sanitation training course certification.
  • Experience working in a supervisory capacity in a fast-paced quick service environment preferred.
  • Stratton Warren, MICROS or other inventory control or POS experience helpful.  
  • Must acquire and maintain a valid Health Food Handlers Card, annual Liquor Liability and Control Management Certification, and other required compliance trainings.  
  • Must obtain and maintain a valid gaming license from the State Gaming Agency and Tribal Gaming Office prior to beginning work and must renew annually.
